Aloo Gobhi

Aloo Gobhi is a classic vegetarian Indian dish that translates to "Potato Cauliflower" in English. It is a popular and flavorful curry made with potatoes (aloo) and cauliflower (gobhi) cooked with a blend of aromatic spices and herbs. Aloo Gobhi is commonly prepared in households across India and is also served in Indian restaurants worldwide.

Here's a basic recipe for making Aloo Gobhi:

Ingredients:

- 2 cups cauliflower florets

- 2 medium-sized potatoes, peeled and diced

- 1 large onion, finely chopped

- 2-3 tomatoes, finely chopped

- 2-3 green chilies, slit (adjust to your spice preference)

- 1 tablespoon ginger-garlic paste

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon red chili powder (adjust to your spice preference)

- 1/4 teaspoon garam masala

- 2 tablespoons cooking oil

- Fresh coriander leaves, chopped, for garnish

- Salt to taste

Instructions:

1. Heat oil in a large pan or skillet over medium heat. Add the cumin seeds and let them splutter.

2. Add the chopped onions and green chilies. Sauté until the onions become translucent.

3. Add the ginger-garlic paste and sauté for a minute or until the raw smell disappears.

4. Add the chopped tomatoes and cook until they become soft and the oil starts to separate.

5. Add the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook the spices for a couple of minutes.

6. Add the diced potatoes and cauliflower florets to the pan. Stir gently to coat them evenly with the spices.

7. Cover the pan and cook the Aloo Gobhi on low to medium heat. Stir occasionally to prevent sticking and ensure even cooking.

8. Once the potatoes and cauliflower are tender (but not mushy), sprinkle garam masala over the dish and mix it in.

9. Cook for another minute or two to let the flavors meld together.

10. Garnish with fresh chopped coriander leaves.
