Hara Bhara Kebab

The name "Hara Bhara" translates to "green" in Hindi, which reflects the vibrant green color of these kebabs due to the use of spinach, peas, and coriander leaves. Here's a basic recipe:

Ingredients:

  • 2 cups spinach leaves (cleaned and chopped)

  • 1 cup green peas (fresh or frozen)

  • 2 large potatoes (boiled, peeled, and mashed)

  • 1 small onion (finely chopped)

  • 2-3 green chilies (finely chopped, adjust to taste)

  • 1-inch piece of ginger (grated)

  • 3-4 cloves of garlic (minced)

  • 1 teaspoon cumin seeds

  • 1 teaspoon garam masala

  • 1 teaspoon chaat masala

  • 1 teaspoon amchur powder (dried mango powder)

  • Salt to taste

  • Bread crumbs or roasted gram flour (as needed for binding)

  • Oil for shallow frying

Instructions:

  1. Steam or blanch the spinach leaves and green peas until they are tender. Drain any excess water and let them cool down.

  2. In a blender or food processor, blend the steamed spinach and green peas into a coarse paste without adding water.

  3. Heat a little oil in a pan and add cumin seeds. Let them splutter.

  4. Add chopped onions, green chilies, ginger, and garlic. Sauté until onions turn translucent.

  5. Add the spinach-green pea paste and cook for a couple of minutes. Then, add mashed potatoes, garam masala, chaat masala, amchur powder, and salt. Mix well and cook for another 3-4 minutes.

  6. Remove the mixture from heat and let it cool down.

  7. Once the mixture is cool enough to handle, shape it into small kebabs or patties.

  8. Roll each kebab in bread crumbs or roasted gram flour to coat evenly.

  9. Heat oil in a pan for shallow frying. Once the oil is hot, place the kebabs in the pan and fry until they are golden brown and crispy on both sides.

  10. Drain excess oil on paper towels.

  11. Serve hot with mint chutney or sauce of your choice.
